Summertime Cilantro Lime Corn on the Cob

Summer is in the air. You can smell the grills being fired up around the neighborhood and meat is sizzling away. But veggies are also awesome on the summertime grill, especially corn on the cob! 

My brother's birthday was last weekend and he is a grilling fanatic. I was asked to bring the Corn on the cob and instead of doing the usual, wrap the corn in foil and grill before rubbing with butter, I decided to add a bit of flavor to the corn. My brother took care of grilling the corn along with his pork ribs (which were delicious). 

The corn was light and crunchy with a taste of summer. I can't wait to make this again! 

Lime Corn on the Cob

Summertime Cilantro Lime Corn on the Cob
Makes 15 mini cobs

Ingredients

  • 5 sweet corn cobs, leaves and silk removed
  • 5 Tablespoons butter
  • 1 fresh lime
  • 1 tsp kosher salt
  • 1 tsp lemon pepper
  • Fresh cilantro and more lime for garnish

Directions

  1. Place corn in a large saucepan with water and bring to boil. Cook for 5 minutes.
  2. Heat the butter with the juice of 1 lime in a small saucepan or pan. Let it dissolve completely and turn off just as it starts bubbling. Mix thoroughly.
  3. In the meantime, heat the BBQ and spray with oil.
  4. Drain the corn and rinse under cold water. Cut the cobs into three parts using a sharp knife. 
  5. Sprinkle the kosher salt and lemon pepper over the corn and brush with the lime butter. 
  6. Place on the BBQ and cook each side for approximately 3 minutes or until grill marks appear. 
  7. Remove from the BBQ and drizzle with more fresh lime juice and cilantro. Sprinkle with more kosher salt before serving.
